This recipe started out a a very healthy version of a snack. I’ll be honest, I pulled the original recipe off of Weight Watchers website, as I needed something sweet, but packed with protein for my afternoon snacks. Because at about 2:00, I am overcome with this immense desire to eat something sweet. I don’t know if this is an innate thing for me, or if I’ve just eaten something at 2pm every day that now my body just expects it!
Either way, I had found that I was eating all kinds of things just to curb the sweet craving, but no matter how you slice it, an apple is not chocolate.
So I was on a mission to make something “kinda” helalthy while also subsiding my sweet tooth. And I found it! Peanut Butter Bars from Weight Watchers. It was great, the bars were delicious, and moist and yes, sweet. It was perfect.
Until I decided that peanut butter is not chocolate. So of course, off I went tinkering with the recipe until I could add just the right amount of chocolate, I toyed around with just chocolate chips, but that’s just too little chocolate. Then I thought of making a chocolate dipping sauce, but that’s really too much, and I knew the chocolate would get all over my keyboard at work, and then one day, it hit me. Chocolate candy coating.
Ok, so I’ve never made Chocolate Candy Coating, but what I did have was 2 tubes of Hershey’s Kisses from Easter that hadn’t been opened, and some extra kisses from Christmas. Yes, we have chocolate laying around not being eaten. How this happened, I have no idea, but I knew that the bunnies were just holding on to those kisses for enough time, and those little gems were finally going to be used in something delicious.
So I tweaked the base peanut butter bar recipe a bit, adding more peanut butter to make it even more soft, and then ditched the icing for my own chocolate coating. So I present to you a fattened up version of the healthy peanut butter bars that now curb every sweet tooth that hits me. I hope you enjoy it!
Peanut Butter Chocolate Bites
1 spray(s) cooking spray
1 ⅔ cup(s) all purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp table salt
1½ cup(s) quick cooking rolled oats, do not use instant
1 cup peanut butter
¾ cup(s) packed light brown sugar
½ cup(s) sugar, granulated
½ cup(s) light butter, from a stick, melted
2 large egg(s)
1 tsp vanilla extract
⅓ cup(s) milk
56 Hershey Kisses or semi sweet chocolate chips (About 3 cups)
¾ Stick Butter
1. Preheat oven to 350ºF. Line a 9- X 13-inch baking pan with aluminum foil ; coat foil with cooking spray.
2. Whisk together flour, baking powder, baking soda and salt in a bowl. Whisk in oats and set aside
3. With an electric mixer on medium-high speed, beat peanut butter, brown sugar, granulated sugar and butter in a large bowl until well blended. Add eggs, one at a time, beating well after each addition; beat in vanilla.
4. At low speed, add one half of flour mixture to peanut butter mixture, then one half of milk, beating just until incorporated. Repeat with remaining flour mixture and milk, beating until well mixed.
5. Spread batter in prepared pan. Bake until golden at edges and a toothpick inserted in center comes out clean, about 30 minutes. Transfer to a rack.
6. While the bars are baking, unwrap all the kisses and eat one as a reward (it’s ok, no one will notice).
6. Right before you remove the bars from the oven, start a double boiler, take one pan and put about 1″ of water in it and bring to a boil. Then put another pot on top of the first pot.
7. Then add the kisses and slowly stir them. They will get a little clumpy, so then add a little bit of the butter, then stir again and when it gets clumpy, add more butter. The key here is to keep stirring so it doesn’t get clumpy. Yes, that’s my new favorite word “clumpy”.
8. When it’s all smooth, then put it right on top of the bars. Use a rubber spatula (or anything rubber) to smooth it out. Be careful, it’s gonna be hot
9. Now the hard part…let it cool. This will take about 2-3 hours to cool completely at room temperature, but it’s completely worth it. So go for a run, get out of the house, or face the temptation of peanut butter and chocolate taunting you to dive in.
10. Once cool, lift the bars out using the aluminum foil and then cut into 36 little bites. I find this size is perfect because it’s just little enough to curb your craving, and you can eat 2 of them and not feel bad.
11. Cut and serve!
